How I Resolved my Type2 Diabetes with a pancreas friendly food chart | Video Transcript |Better Bread Choices

I resolved my type 2 diabetes with something called a “glycemic index”, which is basically just a sugar chart.  So I wrote a 20 page paper on this subject and took a look at all the foods I eat.  That’s how I was able to resolve my own type 2 diabetes.
 
In front of me here are these breads.  I use these breads to make sandwiches.  Nothing exotic here, that’s a croissant, wonder bread, a tortilla, an English muffin, a hamburger bun and a bagel.  I eat them all, but they are not all the same.  So I went to my grocery and purchased all of these and on each loaf is the nutrition fact that lists the total carbohydrates for each slice.  The croissant has 11 carbs per slice, wonder bread has 12 carbs per slice, the tortilla has 12 carbs per tortilla, the English muffin has 13 carbs per slice, the hamburger bun has 14 carbs per slice and the bagel has 25 carbs per slice.  The bagel has a higher number because it is a larger piece of bread.
But that is not what is important.  Everybody can read package labels.  What is important is the load each of the breads put on my pancreas.  It is my pancreas that is failing, that’s why I’m a type 2 diabetic. 

What I needed to do to resolve my type 2 diabetes was to find out what I was eating and find out the load each food was putting on my pancreas.  What is important about the load is what my pancreas has to deal with and what I discovered is what is important to me.  And here is what it is.  The English muffin has a load of 5.1 per ounce, the hamburger bun has a load of 6.8 per ounce, wonder bread has a load of 7.2 per ounce, the tortilla has a load of 7.9 per ounce, the croissant has a load of 8.7 per ounce, and the bagel has a load of 11.3 per ounce.   So, when I go to make myself a ham and chess sandwich, the ham has no carbohydrates, the cheese has no carbohydrates, the lettuce has no carbohydrates and the tomato has negligible carbohydrates.  So, I make the sandwich with the English muffin because it has the less load on my pancreas.

Occasionally I will make the sandwich with the bagel but I know it is harder on my pancreas.  That is what is important about the glycemic load and the glycemic index.
